A healthy snack with Primula – Mummascribbles
The beginning of the year always brings diets, gym memberships and the general trying to be healthier. I always used to be a sucker for joining the gym in January, getting trimmer by March and then stopping, paying for a monthly subscription that I no longer used. I don’t have time for the gym anymore and most of my joints are pretty rubbish these days so I am often looking for healthier food alternatives, especially when it comes to an afternoon snack. Rather than eating cakes and crisps in the afternoon, I really need to find things that aren’t quite so fattening!
When I received my latest helping of Primula cheese it was my perfect opportunity to create a healthy afternoon snack for myself. The Primula light cheese has 40% less fat than the original and so I was off to a winning start!
I thought about what might go well with it and decided that some sort of smoked salmon and cheese concoction would be delicious so at the weekend I grabbed some yummy ingredients to make myself a treat.

Working from home today and with the other half also at home after a terrible night with our poorly little munchkin, I decided it was a perfect opportunity to have an afternoon feast.
I took a few crackers and squirted a small amount of Primula light cheese on to make it sticky, spreading it over lightly.

I then cut up some pieces of smoked salmon and placed on top. I left it quite thin because I didn’t want it to be too salmony – I thought that might be a bit overpowering.

I then spread lots of the Primula light cheese over the top of the salmon – a nice thick layer.

I finished off with a generous sprinkling of chives over the top.

Finally, I decorated the plate with a spot of lettuce and a few tomatoes to make it look attractive and even more healthy!

And there I had myself a delicious healthy afternoon snack that was so very simple to pop together. The other half absolutely loved his and was a massive fan of the Primula light cheese.
The taste of the salmon, cheese and chives was melt in the mouth tasty and he requested that should I ever want to make them again he’d be more than willing to eat more!
