Mummascribbles – Christmas snack hacks with Primula – Mummascribbles

We are only days away from Christmas and New Year now and you may well be panicking a little as to what to feed everyone. Not the Turkey…that’s obvious, but the little things. The snacks on Christmas eve, maybe on Boxing Day or even if you are throwing a New Years party. What can you make that is super fast, super easy and super tasty? That’s where I come in! I bring to you, the Primula snack hacks that are perfect for any occasion.

I was very kindly sent the above selection of Primula’s Christmas Edition Tubes to have a go at re-creating their ideas. I chose two to go with and here’s how I got on.
Tomato “Pops”
The ingredients:
Small Italian red ripe tomatoes Primula cheese of choice Chives – finely chopped
Wooden Skewers
The method: (Note the skewers go into the stalk end!)
With a sharp knife cut a lid off the base of the tomatoes (not the stalk end!) and, with a small sharp knife cut the core out of each tomato and scrape out the seeds. Drain upside down on kitchen paper.
Fill the tomatoes with Primula cheese straight from the tube. Insert a wooden skewer into the stalk end of the tomato. Sprinkle with chopped chives.

I made three to have as a snack and so I could use each of the tubes we were sent. I have to say that my favourite for this was the cheese and ham tube. It was really delicious and the flavours worked really well together. My second favourite was the original cheese followed by the cheese with prawn. I am not a massively fish liking person hence this comes in third place! They were really easy to make and would look fab on a party food table! I clearly should have put more chives on though!
Christmas Star Sandwiches
Equipment needed: one large and one small star cutter.
Ingredients:
White Bread Primula Cheese of choice Chives – finely chopped Red Chillies – finely chopped
Cucumber, cut into ribbons
Method:
For each sandwich lightly toast two slices of bread. Spread Primula cheese on one slice and sprinkle with finely chopped chives or chillies. Cut a large star out of the second piece of toast and then a small star out of the centre. Place this prepared star on top of the first slice of prepared toast and recut with the large star cutter to make a star sandwich.
The method for the cucumber one is exactly the same except:
* Spread one slice of toast with Primula cheese of choice and overlap with cucumber ribbons. Proceed as above to cut out the star sandwich.

Yes I know, they aren’t stars. I could have sworn that I had different sizes of star cutters but alas, no I don’t (note to self to buy more!). As Zach was demanding a version there and then I had to use what I have. Again, really easy to make and look really effective as a finished product. I used the yummy cheese and ham tube on this and Zach basically licked all of the cheese off so clearly found it delicious! Again…more chives needed and they definitely look better as stars!

Fig and cheese starter – Serves 2
Ingredients:
4 x Ripe Fresh Figs Primula cheese of choice 4 x slices of Parma Ham Pistachio nuts – finely chopped
Runny Honey
Method:
With a sharp knife cut a cross into the top of each fig, cutting two thirds of the way down and open each fig up slightly. Pipe Primula cheese into the centre of each fig, place two on each serving plate and surround the base of each fig with a slice of Parma Ham. Sprinkle with the chopped Pistachio nuts and before serving drizzle with runny honey.
How they should look:

Avocado dip : (Christmas trees)
Ingredients:
1 ripe avocado 1 dessertspoon lemon juice 70g (approx half a tube) Primula cheese with Prawns Pitta Breads – Toasted Twiglets 1 x red chilli – finely chopped
A few pomegranate seeds (optional)
Method:
Peel and chop the avocado and place in a mixing bowl, add the lemon juice and Primula cheese with prawns. Using a hand blender blitz the mixture until smooth, or mix with a fork.
Cut the toasted Pitta bread into triangles and “pipe” or spread onto the pitta triangles.
Sprinkle with the finely chopped chilli and top with a pomegranate seed.
Place a half twiglet at the base of the “tree” for the trunk.
